Philippe Labadie prepares traditional dishes and local specialties made with the best produce.

  • Semi-cooked duck foie gras, rose petal preserves and toasted gingerbread.
  • Gourmet salad with seared duck foie gras.

  • Lamb sweetbreads with porcini mushrooms.
  • Small tournedos of beef.
  • Small semi-boneless quail with foie gras stuffing.
  • Grilled king shrimp.
  • Minced duck breast with a slice of seared foie gras Rossini style.

Among the selection of local wines (Madiran, Côte de Saint-Mont, Tarriquet, and Tursan), Philippe Labadie also offers some very fine wines such as Saint-Nicolas de Bourgueil or sweet Coteaux de Chalosse, and favourites such as Château Haut Marbuzet (Saint-Estéphe) or Château Galeteau (Saint Emilion).
