Philippe Labadie prepares traditional dishes and local specialties made with the best produce.

  • The gourmet plate with semi-cooked duck foie gras, gingerbread and mango confit
  • Warm goat cheese salad, baked in the oven, honey and Provence herbs on its country toast
  • Fresh salmon fillet just seared

Among the selection of local wines (Madiran, Côte de Saint-Mont, Tarriquet, and Tursan), Philippe Labadie also offers some very fine wines such as Saint-Nicolas de Bourgueil or sweet Coteaux de Chalosse, and favourites such as Château Haut Marbuzet (Saint-Estéphe) or Château Galeteau (Saint Emilion).
